Fermentation is a chance to learn how to create sauerkraut and 28 minutes to think about what control and power mean to you.

While in lockdown, Wez has created a new project to help listeners think about control – and salted vegetables. Part podcast, part performance, part cooking experiment – this is Fermentation.

(from left to right) A jar of chopped vegetables, a blue tub of salt, a small jar with an orange life and a cabbage

Welcome to Fermentation.

To get the most from this performance please use headphones and isolate yourself away from others.

You must have:

  • 1 firm cabbage
  • 1 tablespoon of fine salt
  • 1 knife

Feel free to pick whatever spices you wish to add to your ferment, do some research or get creative.

  • Spices

Choosing size according to the size of your cabbage you need:

  • A bowl
  • A sterilised jar (You can sterilise simply pouring boiling water into your jar)

You will need around an inch and a half of space at the top of your jar to allow for liquid in the ferment to rise.

You may want to add a weight to your jar to compact the ferment to encourage more liquid from your vegetables.
You can do this by placing a sterilised sandwich bag of water or baking beans on top of the ferment. For the first 4-5 days of fermenting, open the jar once daily to let gas escape.

You are now ready for the performance.
