While in lockdown, Wez has created a new project to help listeners think about control – and salted vegetables. Part podcast, part performance, part cooking experiment – this is Fermentation.
Welcome to Fermentation.
To get the most from this performance please use headphones and isolate yourself away from others.
You must have:
- 1 firm cabbage
- 1 tablespoon of fine salt
- 1 knife
Feel free to pick whatever spices you wish to add to your ferment, do some research or get creative.
Choosing size according to the size of your cabbage you need:
- A bowl
- A sterilised jar (You can sterilise simply pouring boiling water into your jar)
You will need around an inch and a half of space at the top of your jar to allow for liquid in the ferment to rise.
AFTER THE PERFORMANCE
You may want to add a weight to your jar to compact the ferment to encourage more liquid from your vegetables.
You can do this by placing a sterilised sandwich bag of water or baking beans on top of the ferment. For the first 4-5 days of fermenting, open the jar once daily to let gas escape.
